Running out of propane on a Tuesday afternoon with dinner half cooked and the nearest fill station forty minutes away is the kind of lesson an off-grid cook tends to learn once.
Propane is the workhorse fuel for off-grid kitchens because it's dense, stable in storage, doesn't need electricity to burn, and gives you the instant, adjustable flame that wood and rocket stoves can't match for everyday cooking. But almost nobody plans the tank size and refill logistics before they buy the stove. They pick a range, hook up whatever tank came with the place or the RV, and then spend the first year guessing at when to refill and how much fuel they're actually burning. This post is about closing that gap: how to size a propane setup for cooking specifically, how refill logistics actually work in rural areas, and the mistakes that leave people cold and hungry.
If you've read about heating a small off-grid space you already know propane heat can chew through a tank fast, since a heater running most of the day pulls far more than a stove burner. Cooking is a completely different animal. Check the BTU/hr rating stamped on your own range's burners, and remember most home cooking doesn't run burners at full blast for hours at a stretch. An oven cycles on and off to hold temperature rather than firing continuously.
The only reliable way to know your own cooking burn rate is to log tank levels or cylinder weights over a few weeks of normal meals. That's a rough planning number, not a guarantee, since cooking style, altitude, tank condition, and appliance efficiency all move it around. Once you know your weekly burn rate, divide tank capacity by it to see how long a 100 lb cylinder or a 250 gallon tank will realistically last you.
The reason this matters is that off-grid households often don't run cooking-only propane. They run cooking and a propane fridge, or cooking and a wall heater, or cooking and hot water, all off the same tank. Every one of those loads needs to be counted separately and added up, because the tank doesn't know or care which appliance is pulling from it.
20 lb (5 gallon) cylinders, the kind used on backyard grills, are fine as a backup or for a very small camp kitchen, but they're a poor primary fuel source for a full-time off-grid kitchen. They run out fast, and swapping a small cylinder in freezing rain at 6am gets old quickly. Keep two or three as spares even if they're not your main supply.
30 to 40 lb cylinders step up the capacity and are common on RVs and small cabins. They're still small enough to carry to a refill station yourself, which matters if you don't have delivery access.
100 lb cylinders suit a lot of small off-grid households that cook and run one or two other light propane appliances; check the stamped capacity for the exact gallon figure. They're portable enough to haul in a truck bed to a fill station, but hold enough fuel that you're not making that trip every couple of weeks.
250, 325, 500, and 1,000 gallon tanks are stationary, usually set on a pad or buried, and are filled by a delivery truck rather than hauled anywhere. This is the setup for households running cooking, heating, hot water, and sometimes a propane fridge or generator all off one supply. The trade-off is you're now dependent on a delivery truck being able to reach your property, which is its own planning problem on rough or seasonal roads.
Sizing your tank isn't really about how big a tank you can afford or fit. It's about matching the tank to your total propane load and to how you'll realistically get it refilled.
This is the part that trips people up. A 500 gallon buried tank sounds like the mature, professional choice, and for a lot of properties it is. But it only works if a propane delivery truck can physically get to your tank. If your road washes out every spring, gets snowed in for weeks, or has a bridge weight limit, a stationary tank that depends on delivery can leave you stranded with a full gauge reading and no way for the truck to reach you before you run dry.
Before committing to a large stationary tank, walk your access road in the worst season you expect, not the best one. Ask yourself honestly whether a loaded delivery truck could make it in during mud season or after a heavy snow. If the answer is uncertain, a self-haul system with 100 lb cylinders you swap yourself gives you more control, even though it means more trips into town.
Many off-grid households run a hybrid: a mid-size stationary tank for delivery when the road cooperates, plus a couple of 100 lb cylinders as backup that can be hauled out and refilled independently if the truck can't get in. This is the same layered thinking that shows up elsewhere in off-grid planning, like keeping a layered communications stack instead of betting everything on one method. One propane system with no backup path is a single point of failure.
Propane tank gauges read percentage of volume, not percentage of usable fuel, and propane tanks are never filled past 80 percent by design, to leave room for vapor expansion. So a gauge reading "80%" on a fresh fill is actually full. A lot of people panic or celebrate based on a misread gauge.
The bigger issue is that float-type dial gauges are approximate, so treat low readings as a rough signal rather than a precise measurement. If you're relying on propane for cooking and have no backup fuel, treat 30 percent as your real "time to order" mark, not 10 percent. Waiting for the needle to bottom out is how people end up cooking on a camp stove for two weeks in January.
If your setup allows it, a simple standalone propane scale (a bathroom-scale-style platform you sit a smaller cylinder on) gives you an actual weight reading, which is far more reliable than a dial gauge for cylinders under 100 lbs.

Rather than waiting for a low reading and then scrambling, most experienced off-grid cooks build refills into a routine, the same way they'd plan a supply run. If you're already making a monthly trip to town for other reasons, a habit of topping up a spare 100 lb cylinder or checking the stationary tank gauge every time keeps you ahead of the problem instead of reacting to it.
For anyone still in the planning stages, this kind of routine is worth mapping out during your first 30 days on raw land, before you're relying on the system daily. Figure out where your nearest fill station or delivery provider actually is, what their minimum delivery amount is (some won't send a truck for a partial fill), and what their lead time looks like in winter when everyone else is also topping up their tanks.
Propane tanks, cylinders especially, have a stamped manufacture date and generally need recertification (a new stamped test date) every 12 years for standard steel cylinders, sometimes sooner depending on condition. Fill stations will refuse to fill a cylinder that's out of date or that shows visible rust, dents, or damage to the collar and valve. If you're buying used cylinders, check that date stamp before you rely on the tank, the same careful-buyer mindset you'd bring to buying used solar and comms gear: a bargain tank that gets rejected at the fill station isn't a bargain.
For stationary tanks, ownership matters too. Some delivery companies lease tanks rather than sell them, and a lease agreement can require you to buy propane from that supplier, so read the terms. If you're comparing setups, ask directly whether the tank is owned or leased, since a leased tank limits your ability to shop around for better delivery pricing later.
If your kitchen is genuinely propane-only for cooking, with no heating or hot water load sharing the tank, you can run lean: a couple of 100 lb cylinders rotated between use and refill covers most households comfortably. If propane is also your heat source, your hot water, and maybe your fridge, size for the heating season's demand first, since that will dwarf the cooking load, and treat cooking as a small addition on top.
It's also worth thinking about propane as one piece of a broader kitchen setup rather than the whole plan. A lot of resilient off-grid kitchens pair a propane range for daily cooking with a wood cookstove or solar oven for backup, so a delivery delay or a frozen line doesn't mean no hot meals.
